Jen Barney owns Meringue Bakery, and she also happens to be a World Baking Champion! Nbd, right?! Jen was the winner of Food Network’s Holiday Baking Championship-Season 4, and also winner of the Season 5 Holiday Baking Championship’s Homecoming Special Edition! Jen and her team at Meringue Bakery will also be competing on another Food Network show in Canada called The Big Bake on November 18th. Unfortunately, it will not be accessible in the USA but we wish them well!

MERINGUE BAKERY’S SHORT BREAD COOKIES!

INGREDIENTS:

  • 4 ounces sugar
  • 1 ounce almond flour
  • 10 ounces all purpose flour
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3 ounces heavy cream
  • 8 ounces of butter (cold)

DIRECTIONS: In a food processor or with your hands cut in the butter into all of the dry ingredients until they look like course cornmeal.  Stream all of the liquid in and pat into a brick form. Refrigerate for 30 minutes and roll out as a shortbread cookie
